Plum Frangipan TartPlum Frangipani Tart

Serves 8
• 375g Shortcrust Pastry
• 100g Butter
• 125g Caster Sugar
• 2 Eggs
• 1tsp Vanilla Extract
• 175g Ground Almonds
• 50g Plain Flour
• 6-8 Plums (Cut into Eighths)

1. Line a 23cm tart tin with the pastry. Chill for 30 minutes.
2. Cream the butter and sugar until pale and fluffy.
3. Add the eggs and vanilla.
4. Fold in the almonds and flour
5. Heat the oven to gas mark 4 (180c)
6. Spoon the frangipan into the tart case
7. Arrange the plum slices over the top
8. Sprinkle over 1tbsp of sugar
9. Bake for 45-55 minutes
