  • 125g Butter
  • 125g Caster Sugar
  • 2 eggs
  • 125g Self Raising Flour
  • Zest 1 Lemon
  • 50g Ground Almonds
  • 5-6 Plums
  • 8-10 Whole Almonds
  • 1tbsp Redcurrant Jelly
  1. Preheat the oven to 180c (Gas Mark 4). Grease and line the base of a sandwich tin
  2. Beat the butter and sugar until light and creamy
  3. Add the eggs
  4. Fold in the rest of the flour, lemon zest and ground almonds
  5. Arrange the plums on top, skin side down then the whole almonds
  6. Bake for 35-45 minutes
  7. Melt the redcurrant jelly and brush on top of the cake

• 375g Shortcrust Pastry
• 100g Butter
• 125g Caster Sugar
• 2 Eggs
• 1tsp Vanilla Extract
• 175g Ground Almonds
• 50g Plain Flour
• 6-8 Plums (Cut into Eighths)

1. Line a 23cm tart tin with the pastry. Chill for 30 minutes.
2. Cream the butter and sugar until pale and fluffy.
3. Add the eggs and vanilla.
4. Fold in the almonds and flour
5. Heat the oven to gas mark 4 (180c)
6. Spoon the frangipan into the tart case
7. Arrange the plum slices over the top
8. Sprinkle over 1tbsp of sugar
9. Bake for 45-55 minutes

  • 150ml Chicken Stock
  • 3tsp Plum Jam
  • ½ tsp Ground Ginger
  • 1 Garlic Clove
  • 1 tsp Lemon Juice
  • 1tbsp Soy Sauce
  • ½ tsp Dijon Mustard
  • 4 Plums
  1. Brown the pork for 2 minutes on each side
  2. Mix together the stock, jam, ginger, garlic, lemon juice, soy sauce and mustard to make a sauce
  3. Pour the sauce over the pork steaks, cover and cook for 5 minutes
  4. Scatter the plums and simmer for 5 minutes

  • 25g Spread
  • 4 Large Plums
  • 15g Flaked Almonds
  • 1 tsp Icing Sugar
  1. Preheat oven to Gas Mark 7 (220c). Roll Pastry Out and place on Baking Sheet
  2. Combine the marzipan and spread
  3. Spread the marzipan mixture over the pastry. Scatter with plums and flaked almonds
  4. Bake for 20 minutes
  5. Dust with the icing sugar
