- 250g Rice
- 1tsp Thyme
- 1 Onion
- 3 Celery Sticks
- 1 Red Pepper
- 175g Mushrooms
- 2tsp Paprika
- 400g Cooked Chicken Breast
- 4 Tomatoes
- Cook the rice according to the packet instructions with the thyme
- Stir fry the vegetables for 4-5 minutes
- Drain the rice and add to the frying pan and add the paprika
- Add the chicken and tomatoes and add to the pan
- Cook for 2-3 minutes
