Serves 2

  • 150g Pasta
  • 2 Slices Ham
  • 1 Onion
  • 1 tsp Butter
  • 3-4 Mushrooms
  • 25g Flour
  • 1 Hard Boiled Egg
  • 240ml Milk
  • ½ tsp Basil
  1. Cook the pasta according to the packet instructions
  2. Fry the onion the butter. Add flour and cook for 30 seconds
  3. Take it off the heat and add the milk and stir
  4. Add the mushrooms, ham and basil and cook for 1 minute
  5. Cut the hardboiled egg into ¼’s add to the mixture
  6. Drain the pasta and pour over the mixture

Serves 1

  • 1 Garlic Clove
  • 1 tsp Thyme
  • 2 Eggs (Separated)
  • 15g Chorizo
  • 150g Mushrooms
  1. Fry the garlic for 30 seconds.
  2. Add the mushrooms and cook over a medium heat for 5-6 minutes.
  3. Add the chorizo and cook for 1-2 minutes until golden
  4. Beat the egg yolks with a tbsp of cold water and stir in the thyme leaves. Season.
  5. In a separate bowl, whisk the egg whites until stiff peaks form and then carefully fold into the egg yolk.
  6. Pour this mixture into the pan and cook for 2-3 minutes until set and golden underneath
