Serves 1

  • 1 Garlic Clove
  • 1 tsp Thyme
  • 2 Eggs (Separated)
  • 15g Chorizo
  • 150g Mushrooms
  1. Fry the garlic for 30 seconds.
  2. Add the mushrooms and cook over a medium heat for 5-6 minutes.
  3. Add the chorizo and cook for 1-2 minutes until golden
  4. Beat the egg yolks with a tbsp of cold water and stir in the thyme leaves. Season.
  5. In a separate bowl, whisk the egg whites until stiff peaks form and then carefully fold into the egg yolk.
  6. Pour this mixture into the pan and cook for 2-3 minutes until set and golden underneath
