Garlic Mushroom and Chorizo Soufflé Omelette
Serves 1
- 1 Garlic Clove
- 1 tsp Thyme
- 2 Eggs (Separated)
- 15g Chorizo
- 150g Mushrooms
- Fry the garlic for 30 seconds.
- Add the mushrooms and cook over a medium heat for 5-6 minutes.
- Add the chorizo and cook for 1-2 minutes until golden
- Beat the egg yolks with a tbsp of cold water and stir in the thyme leaves. Season.
- In a separate bowl, whisk the egg whites until stiff peaks form and then carefully fold into the egg yolk.
- Pour this mixture into the pan and cook for 2-3 minutes until set and golden underneath
