Jerk Chicken
- 12 Boneless, Skinless Chicken Thighs
- 6 Spring Onions
- 20g Root Ginger
- 4 Garlic Cloves
- 2-3 Scotch Bonnet Chillies
- 1tsp Thyme
- 1tsp All Spice
- ½ tsp Cinnamon
- 3tbsp Brown Sugar
- 2tbsp Lime Juice
- 1 ½ tbsp. Dark Soy Sauce
- Mix all ingredients apart from the chicken in a blender until thick puree
- Slash each chicken thigh a couple times. Season before places marinade on top and mix well. Chill for 2 hours
- Preheat the oven to Gas Mark 7 (220c) and bake the chicken for 25 minutes
