Jerk Chicken

Serves 6Jerk Chicken

  • 12 Boneless, Skinless Chicken Thighs
  • 6 Spring Onions
  • 20g Root Ginger
  • 4 Garlic Cloves
  • 2-3 Scotch Bonnet Chillies
  • 1tsp Thyme
  • 1tsp All Spice
  • ½ tsp Cinnamon
  • 3tbsp Brown Sugar
  • 2tbsp Lime Juice
  • 1 ½ tbsp. Dark Soy Sauce
  1. Mix all ingredients apart from the chicken in a blender until thick puree
  2. Slash each chicken thigh a couple times. Season before places marinade on top and mix well. Chill for 2 hours
  3. Preheat the oven to Gas Mark 7 (220c) and bake the chicken for 25 minutes
