Serves 4

  • 400g (can) Chopped Tomatoes
  • 250g Mixed Peppers
  • 85g Black Olives
  • 2tsp Ground Cinnamon
  • 1tbsp Dried Mixed Herbs
  • 2 x 185g (can) Tuna
  • 200g Cream Cheese
  • 12 Lasagne Sheets
  • 125g Mozzarella
  1. Heat the oven to Gas Mark 6 (200c)
  2. Simmer the tomatoes, peppers, olives, cinnamon and herbs
  3. Add the tuna and season
  4. Mix the cream cheese with seasoning and a little milk to make a thick sauce
  5. Pour a third of the mixture into bottom of a dish and top with 4 lasagne sheets
  6. Top with a third of the cream cheese mixture and repeat until mixture has gone.
  7. Scatter over the mozzarella
  8. Bake of 35 minutes

  • 50g Rice
  • 450g Skinless White Fish
  • 1/2 Red Chilli
  • 1 Lemon  Grass Bulb
  • 2 tbsp Lime Juice
  • 1 Egg
  • 1 Garlic Clove
  • 1tsp Coriander
  • 1tbsp Soy Sauce
  1. Cook the rice and drain well
  2. Blend all the ingredients
  3. Chill for 1 hour
  4. With wet hands divide into 12
  5. Fry each fishcake on each side for 4-5 minutes

  • 2 Slices White Bread
  • 1 tsp Parsley
  • 1 Egg
  • 1 tbsp Plain Flour
  • 4 x 200g White Fish
  1. Preheat the oven to gas mark 6 (200c)
  2. Toast the bread and the blitz in food processor.
  3. Mix in the parsley and place on a plate
  4. Pour the egg in a bowl  and sprinkle a tray with flour
  5. Dip the fish in the egg, flour and then crumbs on both sides.

Place on baking tray and bake for 20 minutes

Salmon Fishcakes

  • 400g Potatoes
  • 400g Skinless Salmon Fillets
  • 6 Spring Onions
  • 4tsp Parsley
  • Zest of 1 Lemon
  • 2tbsp Capers (Chopped)
  • 1 Egg
  • 50g Breadcrumbs

 

  1. Place the potatoes in boiling water and simmer for 15 minutes. Drain and mash
  2. Microwave salmon for 8 minutes and flake
  3. Add the salmon, spring onion, parsley, lemon zest, capers and mash. Season and combine.
  4. Shape into 8 fishcakes. Dip in egg and then breadcrumbs. Chill for 10 minutes.
  5. Fry fishcakes for 4 minutes each side

Cod & Prawn Gratin

A hairy dieters recipe. I used a fish pie mix for extra flavour. 8 ProPoints Per serving

Cod & Prawn Gratin

Serves 4

  • 100g Cooked Peeled Prawns
  • 400g White Fish
  • 150g Smoked Haddock
  • 400ml Milk
  • 1 Bay Leaf
  • ½ Onion
  • 3 tbsp Cornflour
  • 100g Frozen Peas
  • 2 tbsp White Wine
  • 40g Breadcrumbs
  • 25g Grated Cheese
  1. Pour the milk into a saucepan and add the bay leaf and onion and bring to gentle simmer
  2. Mix the cornflour with 3tbsp water and pout into the milk. Cook on a low heat until onion is tender
  3. Stir the peas and wine and cook for 1 minutes
  4. Add the fish pieces and cook for 2 minutes
  5. Stir in the prawns and cook for a further 2 minutes
  6. Preheat the grill to high
  7. Spoon the fish mixture into a pie dish and sprinkle over with breadcrumbs and the cheese.
  8. Place under the grill for 2-3 minutes
