I couldn’t find Pinto beans so used butter beans. 8 ProPoints per serving

Serves 4

  • 2 Red Onions
  • 8 Pork Sausages
  • 3 Garlic Cloves
  • 110g Chorizo
  • 1tsp Smoked Paprika
  • 1tsp Black Mustard Seeds
  • 2tsp of Cumin seeds
  • 400g Chopped Tomatoes
  • 6 Tomatoes
  • 400g Pinto Beans
  1. Fry the onions on a low heat until soft
  2. Increase the heat and add the sausages for 2 minutes
  3. Add the garlic and chorizo for 1-2 minutes.
  4. Reduce the heat and add the herbs and cook for 5 minutes
  5. Tip the tomatoes into the pan with 400ml of water. Cover and simmer for 30 minutes
  6. Add the beans and increase the heat for 10 minutes

White Bean Saffron Soup

Serves 8

  • 1 Onion
  • 3 Celery Sticks
  • 1 Large Carrot
  • Pinch Saffron
  • 2 x 400g Cannellini Beans (Drained & Rinsed)
  • 1L Vegetable Stock
  • 125g Crème Fraiche
  1. Fry onion, celery and carrots for 5-8 minutes covered over a medium heat
  2. Add the saffron, cannellini beans and stock and bring to the boil. Reduce the heat and simmer for 5 minutes
  3. Add the crème fraiche and whizz with a blender
