White Bean Saffron Soup

Serves 8

  • 1 Onion
  • 3 Celery Sticks
  • 1 Large Carrot
  • Pinch Saffron
  • 2 x 400g Cannellini Beans (Drained & Rinsed)
  • 1L Vegetable Stock
  • 125g Crème Fraiche
  1. Fry onion, celery and carrots for 5-8 minutes covered over a medium heat
  2. Add the saffron, cannellini beans and stock and bring to the boil. Reduce the heat and simmer for 5 minutes
  3. Add the crème fraiche and whizz with a blender

  1. Was looking for something to use up bits in the fridge and found this recipe. Husband said it was delicious. Didn’t have the red chilli or coriander to garnish so just used chilli flakes. Took me all of 30 minutes start to finish.
